Derrumbes N.3 San Luis

This mezcal comes from high altitude in the state of San Luis Potosi. Wild Salmiana agaves are cooked in ovens above ground, not in underground stone pits, so this mescal doesn’t have the smoky side. The terroir of the area is evident there. Calcareous soil where agaves grow imparts some chalky character.
